The restaurant can be planned as a fashionable and expensive institution, and the second point is the policy of affordable prices. The first path requires not only brisk traffic around the restaurant, but also the appropriate environment around it. The second approach involves recruiting a client base at the expense of people who find themselves next to a cafe, for example, work or live nearby. You can directly focus on servicing employees of a neighboring enterprise. To open fast food, they first find a recreation area or a place at the intersection of roads, crowds of large numbers of people. Before opening any type of restaurant, learn about the seasonal features of the place. The flow of customers in winter and summer can vary up to 5-10 times.

The color scheme of the ceiling is limited to white, sometimes with the addition of brown. Smooth coating is a bad decision, it is better to add stucco and beams. The same goes for walls. To finish them, choose a cladding with repeating elements, for example, wallpaper with the same small patterns,solid wood coating with indentations. Such a classic restaurant will look advantageous compared to others. Tables are placed on the basis of geometric patterns.

The hue range is not necessary to limit the blue, blue and green colors, on the contrary, their use will make the interior less original. Cafes are filled with real objects from the sea - shells, starfish, stones. The interior is also decorated with imitations of anchors, helms, windows, corals and reefs. The dominant role in any seafood restaurant is played by the counter. It is performed in the form of a rock, a lighthouse or rigging with several sails. Organization of the dining room

In the planning, such nuances as the stock for moving chairs and tables, convenience for guests and staff, and the possibility of redevelopment are important. The appearance of the premises should be changed from time to time so that it does not bother regular customers. It is better to arrange a dining room with movable tables to move them in a row for holding feasts and small parties. In large rooms, partitions will be relevant. Thus, zones for large companies and corners for two are distinguished. Due to obstacles they create different levels of illumination for tables. In some places they organize an intimate dim light, and in others - as saturated as possible. To simplify the work of personnel, it is better to choose partitions on wheels. Before opening the restaurant, check what kind of view opens from the hall. It is advisable that visitors do not see the front door or walls of technical rooms.

The institution faces the bar. Some visitors spend a lot of time talking with the bartender. Due to constant loads, the countertop is made strong: made of stone, wood or high-strength glass. On the reverse side of the rack should arrange a layout convenient for the staff. The ideal height of the counter is 105-120 cm, depth - 40-50. The bar is furnished with bar stools. Experiment with their form, if the general design of the restaurant allows. Convenience of seats is a significant point, the client will not sit in an uncomfortable chair for a long time and, most likely, he will simply leave the restaurant. There are only two main design decisions for a bar counter: a wooden structure and an option from modern technological materials. Thematic options are also popular.

It should be selected among special sets for restaurants.For a compact bar for a couple of dozen people, you need a minimum of furniture, and the elements can be made from rough materials. The French style, in turn, allows the use of thin openwork furniture. Chairs and tables for the "classics" are bought only from high quality materials, because replacing the kit will cost a lot, and finding the same sophisticated kit is not always possible. The situation with design in national or modern trends is different. Finding the same or as similar furniture as possible is not difficult. Ergonomics and convenience play an important role. The owner should personally verify these qualities. As for the form, the "golden mean" is called rectangular: at tables, chairs, sideboards, cupboards and a bar counter. An appropriate approach when choosing furniture requires many technological and ethnic styles.

Lighting

The comfort of visitors depends on the use of lighting devices and the arrangement of natural lighting. In the daytime, you should not keep the curtains closed and switch to artificial lighting. At the same time, part of the lighting devices should be kept on constantly, primarily less bright. In addition to the direct function, i.e., ensuring normal visibility, lighting has a role in creating a light environment and color gamut. The dimming system will allow you to adjust the light - in order to change the atmosphere in the room. Lighting devices are assembled in special compositions to decorate the corners of the restaurant. Such venues are ideal for competitions and performances by artists. In institutions with a technological design they create lighting effects, sometimes they use non-traditional light sources, for example, neon lamps.

Selection of textiles for a restaurant

Textiles are selected in one style direction, thereby completing the overall design. High-level restaurants always use chair covers, stand-up skirts, napkins, naperons, tablecloths and curtains. Curtains are selected draped, with pickups and from thick fabrics. Cases are used to add solemnity to the atmosphere. They are necessarily used if the institution celebrates a holiday, and on weekdays to emphasize the status of the institution. Covers protect expensive furniture from damage. The style of the institution determines the choice of tablecloths. In this case, the most versatile material is silk. Together with tablecloths they use muletons - special protectors to protect the table cover from temperature effects, mechanical damage and moisture. Thanks to this device, textiles do not slip, and cutlery does not make loud noises when in contact with the table. On top of the main tablecloth, additional ones are sometimes spread - naperons, primarily in expensive establishments.

How to arrange the menu

Ideal in terms of design, the menu is presentable in appearance, contains images and descriptions of dishes and is convenient to hold in your hands. The popularity of a particular menu item often depends on the design. The brochure should correctly group the dishes, and leave the binding free or fill in the main sentences. The double menu has proved itself well - a booklet plus a sheet with the most popular positions. The price list is drawn up in accordance with the design and status of the restaurant, so the materials for its manufacture should be selected carefully. The visual design and font of the menu are consistent with the features of the interior, so as not to cause customers a sense of "dissonance". Symbols are made large and distinct, without errors in the naming of points and inconsistency with language standards.The restaurant logo is put on the cover, and on the last or first page they write a little about the institution itself. Conventionally, all kitchen equipment for use in a restaurant is divided into eight groups: refrigeration, thermal, bar, electromechanical, dishwasher, bakery, confectionery and auxiliary. Among refrigeration appliances, the greatest need arises in cabinets, chambers, shock freezers, ice makers and display cases. Thermal technology is divided into multifunctional and independent. The first thing to do is choose stoves, ovens and combi steamers. When choosing a stove, attention is paid primarily to the type and method of installation, the possibility of instant heating and the shutdown option in the absence of dishes.Combi ovens are convenient in that they have 4 functions: electric pans, ovens, deep fryers and stoves. Of the bakery and confectionery equipment, an oven and a basic mixer are enough - if we are talking about a small restaurant.

The restaurant's toilet should look perfect. The room is decorated with expensive finishes and plumbing. The unconditional moment is the cleanliness and hygiene of the restroom, because on this basis, visitors form part of the impression of the establishment. Cabins are wide, with all amenities. Dispensers for liquid soap and containers with paper towels are installed near the washbasins. In the design of the modern bathroom, in addition to tile, there is a tree in the form of neat panels. In the toilets of catering establishments, it is customary to organize color contrasts, for example, floors and walls, sinks and cabinets under it. Bathrooms are made approximately the same in all themed restaurants, but if the atmosphere in the dining room is luxurious, then it should also meet these criteria in the toilet. Then in the bathroom they install classic paneled furniture and amenities under the "classics".

The facade of the cafe usually distinguishes it from a series of neighboring buildings. The entrance to the summer ground is decorated with sculptures or flowerpots with large plants. Marquises and onings are often installed on the facade itself - above the entrance and windows. The appearance of the sign is a separate moment, it should be carefully planned. It is better to give preference to large letters that are installed separately, rather than embedded in a solid signboard. The letters illuminate inside so that the facade changes in the evening. Showcases are sometimes made out with text, in addition to the main inscription. In addition to letters, the main dishes of the institution are painted on the glass, and this acts as a kind of outdoor advertising. Across the street, you can install one or two shaped signs.
